To be honest with you, I get to have the same problems sometimes,,
I found out that, this cake sheet needs to stay nice and moist. 
You don’t want to let it dry out. When you’re cooling it, it still needs to be lightly covered to keep the moisture. 
When rolling, go very gently at the beginning and go little tight at the end. 
Still cracks? The heck with it! Just cover it up with whipped cream!

植物性 而且便宜,不會很容易壞掉!!
我覺得動物性的味道比較香但是貴,很快壞掉..
