
MASA介紹蛋糕食譜-要做小蛋糕, 沒有烤箱, 也沒有時間用Gelatin (吉利丁) 凝固. 但是還要做一個漂亮的蛋糕. 那怎麼幫? 這次我來用鬆餅粉做蛋糕. 當然,我沒有要做普通的Pancake(煎餅) 做sponge(海綿)的部分我代用煎餅, 塗一點Rum syrup(兰姆酒糖水)上去, 中間加藍莓乳酪, 裝飾一下…Hey! I think it’s working!!
聖誕節蛋糕Part II-Oven-less迷你藍莓乳酪蛋糕的材料
煎餅 Pancakes 2片
*用普通的鬆餅粉就ok了
乳酪 Cream cheese—50g
藍莓果醬 Blueberry jam—1/2大匙
鮮奶油(醬+舖用的) Whipping cream(Sauce+Coating use)—100cc
糖粉 Powder sugar—適量
巧克力 Chocolate—適量
藍莓(冷凍) Frozen blueberry—適量
牛奶盒子(空的) Milk package (empty)
兰姆酒 Rum—適量
砂糖 Sugar
聖誕節蛋糕Part II-Oven-less迷你藍莓乳酪蛋糕的做法

(1) 做煎餅
記得, 麵糊放入鍋子裡時候. 拿湯匙高一點, 讓它自然圓形散開.
麵糊很粘, 用湯匙背面成型, 不好弄…

(2) 做模型. 右手用筷子拉緊, 左手一直轉起來, 做圓形

(3) 因為我要做小的(8cm左右), 原本的太大, 所以我用釘書機 縮小圓形
如果你要做大的話, 不用釘起來. 直接用

(4) 放(3)煎餅上面壓下去

(5) 做兩個一樣大小的煎餅. 外面O型的剩下的部分,不要丟掉!!

(6) O型的剩下的鬆餅, 放在果汁機裡打碎
**不是中間圓形的!!! 只要打外面的部分!!
oops..(°∇°;)\( ̄ _  ̄ ) 不要弄錯..

(7) 做出來Cake crumb (蛋糕屑)

(8) 做兰姆酒糖水. 水:砂糖=1:1 煮一下, 砂糖溶化後, 熄火.冷卻. 加適量的兰姆酒.
用白蘭地, 或 其他的也可以
如果你是酒鬼, 加多一點酒.
如果給小朋友吃, 不要加酒, 直接塗糖水

(9) 乳酪加溫一下, 把它弄軟一點
*注意!! 不用太熱! 變軟就好了. 太熱等一下加其他的材料, 會溶化.
變太水, 不好處理..

(10) 加糖粉,藍莓果醬, 攪拌好. 再加一大匙的打好的鮮奶油
*注意!! 鮮奶油100cc 不是全部要加進去的!!
不一定要用藍莓, 草莓, 葡萄, 都可以.
每個果醬甜味不一樣. 自己調甜度

(11) 用刷子兩片兩面都要塗(8)上去

(12) 把(10)放在袋子裡

(13) 小盤子上面放(11), 圓形擠出來(12), 有的話放藍莓

(14) 另外一片煎餅, 比較平的面往上放在(13)上面
因為等下,用鮮奶油,全身包起來. 我要上面平面

(15) Let’s start coating!! 用小刀子 (10)剩下的鮮奶油舖上去
沒有習慣, 應該有一點難做..沒關係!! 慢慢弄, 大概舖好, 你開心做就好了!!
等一下還有一些可以裝飾的東西!! Take it easy!!

(16) 巧克力, 切小塊後, 把它溶化, 放在袋子裡

(17) 巧克力袋子, 角落切一點點. 蛋糕上面用很快的動作擠出來
為什麼要很快的動作? 因為太慢線會歪掉.
先盤子上面練習一下.. (へ・_・;)へ

終於發現早準備的蛋糕屑!! Ah! this is how you use it!!
(18)蛋糕盤子拿好,慢慢貼(7)蛋糕側面. 上面中間放藍莓.薄荷.完成了!!

Hi Mesa, I have regularly visited your blog for a while now. You are a great chef. I love you recipes. They are not complicated but elegant. Perfect for cooking at home. I’m from the USA.We are going to Tokyo next week, so I was wondering if you have any good recommendations? Like is there any restaurant you think that we should definitely try? We want to try some local places, like those mom and pop shops, because they are not so expensive ($ is dropping like crazy)! And we are going to Taipei after, is there any good Japanese cooking books store in Taipei? I love those Japanese cooking books. In San Francisco, there is this book store carries a good selection. But I want to find more! Thank you!

Hi Mesa, thank you for getting back to me! I understand a little bit of Japanese, and am trying to learn more. I especially like those Japanese cook books since they have pictures for every single step, and the quality of the books are great. So I don’t mind if they’re in Japanese or Mandarin or English~
Where is “Kinokuniya” located? What’s the Mandarin name for it? Since I probably need to ask around to find it, it’s better to know the Chinese name~
Where are you teaching? Do you have your own cooking school? Maybe I can visit your school when I’m there~?

it’s called ‘紀伊國屋’ same name is being used in Taiwan. Most of them are located in Taipei. You won’t have hard time to find it at all.
I don’t have my own cooking school for now,
I am planning though..
I WAS teaching in 基隆. But this term has already ended.. Anyways, hope you find really good books!![回應]

請問一下,市面上罐裝發泡式鮮奶油可以舖在蛋糕外面嗎?需要再做什麼加工處理嗎?
因為昨天做的時候,鮮奶油塗在外面溼溼的..舖在側面沒有辦法附著在蛋糕上面耶。
是哪個地方做錯了嗎?麻煩您幫我解答囉~謝謝!!

HI!! I am so glad that you come often to check my
blog!! First of all, I am from Kanagawa Pref. So I don’t have much information for local restaurants
in Tokyo. If there’s any, I will let you know by the E mail!!
Japanese cooking books, do you need the books
written in Japanese? or cooking books that are
translated in English or Mandarin?
I know there are book stores called ‘Kinokuniya’
in Taipei. It’s the one of the biggest Japanese book store. You will find them both in Japanese&Mandarin.
