SIMPLY明太子奶油醬Penne
要吃義大利麵嘍!! 有人發現, 我很愛吃義大利麵. 沒錯. 這次我來用Penne (義大利管麵) 它也是Pasta 的種類. 因為它的形狀好像鋼筆. 所以它叫這樣子. Penne 它 表面有很多構 它會抓很多醬. 適合用奶油那種濃味的醬. 所以我來想到用鮮奶油和明太子. 明太子原本很鹹. 味道很重. 所以用奶味變薄明太子的鹹味. Well, enough for the introductions 開始吧!! *材料分類 飯&麺類,海鮮類
<材料>
義大利管麵
明太子
鮮奶油
洋蔥
培根
蒜頭
<做法>
| (1)開始煮麵 (2)洋蔥,培根,蒜頭 切片. 明太子去皮* *照片的明太子已經處理好的放在帶子裡很方便. |

| (3)蒜頭,培根,洋蔥炒到香味出來以後, 加鮮奶油. | |
| (4)煮到濃稠. 調味都不要* *明太子會調味道. |
|
| (5)加麵, 如果醬太乾的話加一點剛煮麵的水, | |
| (6)熄火*加明太子 *明太子加熱太久味道會不見. 只有鹹味留. 用預熱就好了 |

Hi Masa, How interesting because I was about to ask you how to make Alfredo sauce for pasta. I’m a pasta/noodle person too! I just use the whipping cream only or anything I need to add? Can’t believe whipping cream is so useful! ^_^

That’s right!! this whipping cream thing regardless, calorie part,
it can do a lot of work for you.
I always have it handy so I can use it whenever I come out with new recipe on the spot.
trust me it won’t hurt you! (just mind its’ expiry date though….(* ̄∇ ̄*)anyways, about your question. I would have to say there so many ways to make Sauce Alfredo,
the way I introduced is just one of the ways of making it. To add more complexity of the
flavor you can add chopped shallots(?紅頭) at (3)step and add white wine, cook for a while
reduce about the half the amount and then add whipping cream. of course without shallots and
white wine I DID enjoy my pasta. So, see what you have in your kitchen,
and deal with it! You are The Chef!! ( ̄ー ̄)[回應]

MASA….每次到日本我都很愛買明太子的飯團.麵包..因為覺得那味道超好吃..後來買了整個明太子回台灣..不過因為整個明太子完全不知道如何吃它..最後整個丟掉了...原來可以我愛吃的明太子義大利麵是這樣做..真是讓我燃起去日本超市買明太子的慾望了...真開心啦..^^

結果我昨天試做了一次..可能是鮮奶油量加的太少了..所以麵有點乾乾的….不過口味真的很好吃哩….^^…..

I love jap cuisine and so glad to find your blog that teach jap dishes I can cook at home. With the mentago, do you have a rough guide on how much i need per person? it is just mentago is not cheap in Melbourne. :)

I didn’t write down the exact amount,, ^^; sorry,
Mentaiko itself contains a lot of salt.
You may want to go easy on it.
One table spoon per serving would be the maximum. If I get to have a chance to cook this,
I will for sure, write every details!!

今天買了明太子是辣的,可以用來做義大利麵嗎?需要如何的處理它?(我是從九州買回)
且目前是放置冷凍庫,如果要使用時,是直接拿出來解凍呢?還是先放冷藏室再移至室溫
下比較不會影響口感??另外也請問:可以再做一些有關明太子的料理嗎??謝謝你!![回應]
